Saint-Véran | Bois de fée
The wine: This is one of our favourites and a wine with lots of character: a nose of lemon peel, racy and stylish, fresh; the palate is lively, with a beautiful ‘ripe’ acidity: the wine is vertical, long, tense and crystalline.
The terroir: This 0.58-hectare plot, facing south on a hillside at an altitude of nearly 350 metres, is located in the commune of Chasselas. Age of vines: 52 years on average. Soils derived from limestone with entroques (Bajocian), silty clay, low in limestone with rocky banks from 50 cm.
Vinification: Whole bunch pressing, cold static settling. Long ageing for 22 months, 30% of which is for 11 months in 100% French oak barrels with very fine grain, and the rest in stainless steel vats. Bottled according to the lunar calendar, no filtration.
