Bourgogne Chardonnay
The wine: A racy, stylish, spicy nose for this flavourful wine, carried by great bitterness and surprising tension. A sparkling finish, despite the absence of limestone. The best of both worlds: flesh and tension.
Terroir: cuvée from two plots with the same type of soil in the village of Leynes: one facing south, the other north-east. Average altitude of 340 metres. Mainly sedimentary volcanic soils, with some clay-limestone soils elsewhere.
Vinification: whole berries are pressed, then cold static settling. Long ageing for 19 months, 10% of which is for nine months in 100% French oak barrels with very fine grain, the rest in stainless steel vats. Bottled according to the lunar calendar with low filtration.
