Saint-Véran | Les Cornillaux
The wine: Even rarer than Condemines, Cornillaux is surprisingly sunny and generous, despite its high altitude: ripe citrus fruits, vanilla, liquorice. On the palate, it is both rich and elegant, with a very long finish. It ages beautifully over time.
The terroir: Area: 13 to 30. Age: 48 years. South-facing plot halfway up the hillside. Altitude: 310m. Derived from limestone with entroques (Bajocian) silty clay with little limestone.
Vinification: Whole bunch pressing, cold static settling. Long ageing for 22 months, 30% of which for 11 months in 100% French oak barrels with very fine grain, and the rest in stainless steel vats. Bottled according to the lunar calendar, no filtration.
