Saint-Véran | Champ Rond
The wine: It is striking for the quality of its aromatic definition, its freshness and its clarity. A wine of astonishing refinement on the palate, salty in flavour, lively, radiant on the finish: a flash of light.
The Terroir: Located in Leynes, on a dome-shaped hilltop, open and breezy, with a gentle 5% slope. The soils are mainly composed of more or less deep, stony gryphaea limestone (Sinemurian) and the rest is limestone sandstone.
Vinification: Pressing of sorted, healthy, whole berries, static cold settling. Long ageing for 20 months, 25% of which is for 9 months in French oak barrels with a very fine grain, and the rest in stainless steel vats. Bottling according to the lunar calendar, with little or no filtration.
