Saint-Véran
The wine: An explosive wine with a truffled pineapple nose, almost exotic in its accents, surprisingly expressive and ‘Mâconnais’ in its finery. Smooth, flavourful and spherical on the palate, with a noble opulence.
Terroir: A blend of four small plots located in Chasselas, Leynes and Davayé. Average age of vines: 43 years. A fusion of different terroirs mainly consisting of Triassic bigarres clay (calcisols, variegated clay, magnesian and low in limestone at depth); and also limestone with entroques (Bajocian).
Vinification: Whole bunch pressing, cold static settling. Long ageing for 20 months, 20% of which is spent for nine months in French oak barrels with a very fine grain, and the rest in stainless steel vats. Bottled according to the lunar calendar, with low filtration.
